Quite simply ~ you did a fantastic job with our wedding
at Chinquapin! From your
ability to jump in with our plans two weeks before to the flawlessly run
dinner, we were extremely impressed and overjoyed with your service.
The food was absolutely outstanding ~ dining is so
important to us and our guests~ we could only have dreamed for everything to
be so deliciously prepared. The appetizers excited us so much that we could
barely wait for the rest of the meal. The gazpacho was just perfect and the
garnish of basil was such a nice touch. All the salads were so fresh and
lovely, but the panzella was to die for! What can I say about the filet of
beef and grilled sea bass ~ they were perfectly done and beautifully accented
with the sauce and gremolata. The desserts were wonderful~ we enjoyed all the
cheeses, figs, melon and cookies, but most of all the caramel pecan triangles
were just the best surprise.
The buffet itself was just gorgeous, the display made
both the food and the room look beautiful~ thanks for bringing in the
farmer's market touches~ it was just what we were looking for.
Everyone who attended the wedding raved about the food
and we can't thank you enough for making our wedding a wonderful memory for
everyone.

great job you did organizing my daughter’s wedding. It could not have

I also want you to know that I was very impressed with
the food preparation, in particular the seafood. As you know, I run a company
that buys and processes seafood in Alaska, and I can be very particular about
how seafood is prepared. You did a fantastic job; the fish was all properly
cooked - nothing overcooked at all, especially impressive given the large
number of people you were serving. The preparation and presentation was also
very nice; nothing was over spiced and the natural flavors came through just
right. There were a number of “seafood” folks attending the
wedding and they were all commenting what a great job you did on the
fish.
If you need any reference from a seafood guy for any
reason, I would be happy to oblige.
